Prisco’s Fall 2008 Cooking Class Schedule

School is in session this fall at Prisco’s with even more classes, more topics, more times, more fun!!!
In addition to our Saturday Morning classes, we’ve added some mini-classes during the week. Phyllis Kramer and several guest instructors will help you master new techniques to help you enjoy the satisfaction of cooking for family & friends while creating happy memories in your kitchen

Registration fee varies, but participants for each regular class will receive
a $5.00 coupon towards the purchase of food used in each class.

Bountiful Harvest Table - Saturday - October 4, 2008 - 8:30 AM - $40

Celebrate the bountiful harvest by learning some new techniques for preparing the huge array of fruits & vegetables that are seasonally available, super fresh, very healthy, Oh so delicious.  These dishes will make any ordinary meal very special!!!  The recipes can also answer the question-What Can I Bring? when sharing pot luck with friends.   In today’s class you will learn how to prepare easy & delicious Fall Vegetable Timbales, Layered White & Sweet Potato Bake, Red & Yellow Pepper Tart, Zucchini Pancakes, Braised Radishes as well as a yummy Salmon Chowder with Fall Greens.  Phyllis will also share some scrumptious quick fruit desserts for Fall. Today we will also focus on local produce, discuss organic fruits & vegetables, taste some new flavors & go home with lots of good ideas for putting some excitement on your table.  And yes, we’ll have wine, too.  This class was one of the most frequently requested by our students so don’t miss this delicious idea-class!



Italianissimo - Saturday - October 25, 2008 - 8:30 AM - $40

Italianissimo!!!  That’s what we call a celebration of all things Italian.  Phyllis Kramer will be joined by a chef from Academia Barilla, makers of many fine Italian products. Together they will guide you in tasting & understanding how olive oils differ, selecting appropriate oils for different types of cooking & learning about new unfiltered olive oils.  You will also taste some of the new Italian cheeses that have just arrived.  And then the feast begins.  Today you will learn how to prepare a typical regional Italian meal that uses simple, uncomplicated flavors for the fall season.  Pasta with Eggplant & Tomato Sauce from Sicily, Chicken Saltimbocca, Molded Cauliflower, a Fall Salad with Pears, Pecorino & Walnuts & for dessert a delicious Honey Nut Crostata with Gelato from Tuscany. From appetizers through desserts--you will make many people happy when you cook this meal at your house.  Think about how perfect this meal will be for holiday entertaining, too.  Rob will pour his favorite Italian wines.  Don’t miss our opening gala!



Cook with Your Kids - Saturday - October 25, 2008 - 1:00 PM - $50 a pair

Grab your favorite kid (9-12 years old) & join us for a hands-on cooking class where the two of you can cook together & make the mess in someone else’s kitchen.  Nothing more fun that that.  You will cook as partners, rotating around our kitchen to prepare an Italian Frittata, an easy way to help kids eat more vegetables, Turkey Panini, a grilled sandwich, fun Snacks, Baked Lasagna Casserole and a delicious Peanut Butter Chocolate Dessert. Kids will also learn about healthy eating and sanitation.  They will be able to cook at home without too much assistance once they have mastered techniques from today’s class. We’ll be proud of these junior chefs.  Enrollment is limited so sign up early.


What’s For Dinner? - Saturday - November 8, 2008 - 8:30 AM - $40

How many times have you heard that question???  Phyllis Kramer has answers for you.  Today’s class is all about make-ahead and quick meals for the busy season ahead.   You will learn how to cook less often & save money while still eating healthy foods-for a family or even for 1 or 2 people.  We will focus on meals that come together effortlessly using some already prepared foods. Today you will learn how to prepare a quick Mediterranean Chicken Stew, Oprah’s favorite Turkey Burger with several toppings, Mexican Salsa Soup, and Shrimp in a Sausage Sauce over Stuffed Pasta.  We will also discuss ways to use leftovers for soups, salads & casseroles.  For dessert a quick, crustless Pear Custard Pie.  You’ll be inspired, we’re sure!  Rob will serve appropriate wines for each meal.  Join us.


Cocktail Party at Prisco’s - FRIDAY - November 21, 2008 - 6:30 PM - $40

It’s back!! …our very popular Friday night cocktail party to get you ready for all the celebrations.  This year the focus is on a Do-Ahead Cocktail Party.  Phyllis wants you to have fun at your own party using techniques and recipes that can be made ahead without tasting” leftover”.  There will be no more last- minute fussing when you learn time saving ideas featured in this class.  Start the party with Crispy-crusted Scallop Skewers, Chicken Bites with Orange Sesame Dipping Sauce, Zesty Pork Medallions, Red Pepper Feta Dip, Mushroom Palmiers, Bacon-Olive Rollups, Burger & Bleu Cheese Fondue, & Old-Fashioned Cheese Puffs. Rob will serve wines appropriate for the occasion.  We will also taste many of the new specialty foods available only during the holiday season. How about a Champagne Cosmopolitan to begin our celebration? Bring a friend & sign up early since this class is always very popular! And fun!!!

Knife Skills - Monday - September 29, 2008 - 6:30 PM - $25

Sharp knives are essential in the kitchen so bring your favorite chef’s knife and a cutting board to class and learn how to correctly sharpen & use your knives with confidence. You will learn how to cut, chop & dice like a pro. This is a participation class so enrollment is limited. Sign up early.


Wine and Food Pairing Class - Thursday
October 16, 2008 - 6:30 PM - $25

Join Harlene Murry from Metro Wine who will help you experience how to pair wine with food.  You will sample wines from several countries along with imported Italian cheeses. We will also discuss how to select wines that are perfect with main dishes as well. Rob will introduce you to even more international wines that will be perfect for everyday meals and holiday parties.


Let’s Talk Turkey - Thursday - November 13, 2008 - 6:30 PM - $30

If Thanksgiving is at your house this year sign up for Talking Turkey! Phyllis works for the Butterball Turkey Talk-Line so she can answer your questions about cooking this beautiful bird. You will learn how to stuff, roast & carve a turkey and make smooth delicious gravy—easily. Timing the meal along with side dishes, wines & leftovers will also be discussed. Don’t miss this class & you’ll cook turkey all year!
